چکیده
تا اویل قرن چهاردهم درایران مطبخ در سلسله مراتب طراحی یک خانه در داخل حیاط ساخته میشد و تنها دسترسی آن از حیاط مرکزی بود. تحولات فناوری در دوره مدرن زمینه را برای تغییرات اساسی در فضای آشپزخانه فراهم نموده و این فضا از کاربرد پخت وپز در اوایل دوره پهلوی به کاربردهای پخت وپز، شستشو و نگهداری مواد اولیه تغییر داده و به همراه سایر فناوریهای ساختمانی مانند لوله کشی آب و گازشهری باعث شد که آشپزخانه از بیرون به داخل منتقل و مقوله ی تفاخر که تا قبل آن در محیط مطبخ معنای خاصی نداشت در آشپزخانه به شکل محسوسی معنا پیدا کند. در این پژوهش با جمع آوری اطلاعات مبتنی بر منابع کتابخانه ای و نیز برداشت های میدانی از محیط به بررسی مقوله تفاخر در آشپزخانه و سیر تطور آن اقدام شده است. نتایج بررسی ها نشان داد که تفاخر در محیط مطبخ در گذشته بسیار محدود یا وجود نداشته است و در آشپزخانه کنونی هم صرفا برای طبقه متوسط مطرح میشود و بتدریج در سطوح بالاتر مجدداً از بین میرود و تبدیل به فضایی خدماتی میشود. لذا میتوان اینگونه گفت که تفاخر مقوله ای پیوسته و ثابت نبوده و جهش هایی در هر دوران داشته ودر میان هر قشری از جامعه نیز با شکلهای مختلف مشاهده است.Recognition of the category of pride in architecture and urban planning: the evolution from the kitchen to the kitchen
Until the beginning of the fourteenth century in Iran, the kitchen was built in the design hierarchy of a house inside the courtyard and its only access was from the central courtyard. Technological developments in the modern period have provided the basis for fundamental changes in the kitchen space and this space has changed from the use of cooking in the early Pahlavi period to applications of cooking, washing and storage of raw materials and along with other construction technologies such as water and city plumbing. It caused the kitchen to move from the outside to the inside, and the category of pride, which had not had a special meaning in the kitchen environment before, found a significant meaning in the kitchen. In this research, by collecting information based on library resources as well as field perceptions of the environment, the category of pride in the kitchen and its evolution has been investigated. The results showed that the pride in the kitchen environment in the past was very limited or did not exist and in the current kitchen is only for the middle class and gradually disappears again at higher levels and becomes a service space. Therefore, it can be said that pride is not a continuous category and has had mutations in every era and is observed in different forms among every stratum of society.
